I seem to have digressed into some major crafting lately. But I assure you that my first love has always been baking. I’m just easily distracted by shiny new things.

Getting ready for a busy weekend here and so I spent some time over the last few days stocking up the freezer with a few treats.

I recently stumbled across a new gluten-free blog: Gluten-free on a Shoestring. Sounds like my kinda blog!

When the recipe for these beauties showed up in my mailbox from Gluten-free on a Shoestring, I couldn’t not try them. There’s like six ingredients to them… and most of it is chocolate! Hello!

Oatmeal Cookies

The recipe calls for 5 tablespoons of melted butter, 3/4 cup of brown sugar, 1/4 teaspoon of salt, 2 eggs, 2 cups of rolled oats (not the instant kind), and 1 cup of chocolate chips.

You mix these six ingredients together, drop them by the tablespoon on a parchment covered cookie sheet (I made almost three dozen with this recipe), put them in the freezer for five minutes, then put them in a 350 degree oven for 12 minutes. They are a TASTY treat.

For those following WW points, I figured out these were about 2 points plus each.

If you are following a gluten-free lifestyle, I would encourage you to check out Gluten-free on a Shoestring – and not just because I’m cheap (although I am). But the blog’s author Nicole has some recipes out there that I’ve never seen before – or thought were off limits. Like this recipe for Homemade Cherry Licorice that I HAVE to try making.
