A quick little gluten-free cookie?
Wait?? Whaaaaaat?
I love baking and have been gluten-free for years now due to allergies. I enjoy trying new recipes but the one thing that gets to me is that combining all those gluten-free flours can sometimes be a little time consuming.
I received this recipe in a newsletter from Manitoba Harvest and knew I had to try it right away!
No really. RIGHT AWAY.
Like get off the couch this instant and make it. NOW!
Seriously, I received the recipe at 5:05 p.m. this evening, and I’m posting you the finished recipe at 6:15 p.m. Talk about motivated.
It was super easy to come together.
Mix up the following:
1 egg
1 cup of peanut butter (I used some natural peanut butter I had in the cupboard)
1/2 tsp baking soda
1 cup of Hemp Hearts (I had exactly that, phew!)
1/2 cup of raw cane sugar (I had that too!!)
Handful of chocolate chips (okay, maybe two handfuls)
I scooped them onto a cookie sheet lined with wax paper. They go into a 350 degree oven for 15 minutes and waaaalaaaa… gluten-free cookies!
They are tasty too!
