Spelt Saskatoon Muffins

I’m currently training for my FOURTH half marathon. I’m taking full ownership of bolding and all-capping that this is the FOURTH 21.1 km race I will run this coming Sunday – all in less than one year.

For the last 18 weeks I’ve been enrolled in a half marathon class at the Running Room to try to inspire my running to a new level. It’s been a great experience and one of the things I’ve really tried to focus on this time around is nutrition – particularly around making sure to include some heart heathy options. 

This recipe for Spelt Saskatoon Muffins is a hybrid of a few different recipes. And of course, you can change around the berries, take or leave the chocolate (um… take it, please!) and add in chopped walnuts or almonds, as you wish (and as you have in your pantry).


Spelt Saskatoon Muffins
  1. 1 1/2 cups spelt flour
  2. 1 1/2 cup oats (not instant)
  3. 1/4 cup ground flax seed
  4. 1/2 cup hemp hearts
  5. 1 tsp cinnamon
  6. 1 tsp baking powder
  7. 1/4 cup canola oil
  8. 1 cup yogurt
  9. 1 cup almond milk
  10. 1 cup saskatoons
  11. 1 cup chocolate chips
  12. 1/4 cup honey
  1. Preheat oven to 400 degrees.
  2. Mix all the ingredients together in a large bowl. If the muffins seem dry, add a little more almond milk a few tablespoons at a time.
  3. Line muffin tin. Spoon in batter about 3/4 full. These won't rise much. Bake for about 20-25 minutes till done throughout.

    Hey! I’ll have to try those. I’m doing my first 10K run in over 15 years on July 1st. Not quite ready for the marathon thing, but it’s a start! Good luck with your run.
