These are all natural (not to mention gluten/dairy/egg-free) homemade Lara Bars. I’ve tested these with quite a few people who would not do “protein bars” and these are a clear winner… and they are SUPER easy to make!
These are totally customizable, but here’s a good starting point.
1 cup of chopped dates, pitted
1 cup other dried fruit (I like to start with dried cherries)
1 1/2 tsps of cocoa powder (mmm chocolate)
pinch of sea salt
1 1/3 cup of nuts, such as almonds
up to 1/3 cup of add-ins (such as unsweetened shredded cococut, soaked and dehydrated seeds, chocolate shavings, mini chocolate chips – go wild!)
Process dates, dried fruit, cocoa powder and sea salt in food processor until all chopped up. It will be like a thick paste, perhaps even roll up into a ball. Remove from food processor into a bowl.
Put nuts (and seeds and coconut, if using) into the food processor. Process until a coarse meal.
Break up the fruit past into chunks and add back into the food processor. Add chocolate shavings or mini chips (if using). Process to incorporate all ingredients. Again, it may roll back into a ball.
Press the dough into a sheet of plastic wrap and shape into a square. Refridgerate for 15 to 30 minutes until hardened sufficiently for easy cutting.
