Given the snowstorm we had to bare just last weekend (yes, on Sunday, May 1st) we Winnipeggers do what we can to bring spring along as quickly as possible.
Enter these bright lemony bars!
I first saw this recipe from Ina Garten. And who doesn’t love the Barefoot Contessa? What I appreciate about this recipe is that it is so easy to pull together.
First you pull together the shortbread crust.
Then the lemon curd…
…which bakes to a nice creme-brulee-ish crust!
